Plantain are distinguished by their age. They are simply the younger immature stage of the fruit. Their peel is thick and they have a very firm and starchy textured, lean flavored flesh due to their very low sugar. They are eaten as staple food or with rice, pap, fried eggs. Unripe plantain is rich source of fiber, vitamin A, C and B-6, and minerals magnesium and potassium.
